What can I say? 2 loaves of Sweetcorn Bread GONE in record time! No kneading. No rising. Quick and easy.
Ingredients:
(makes 2 loaves)
3 cups white flour
2 Tbsp sugar
2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp salt
2 eggs
1/3 cup vegetable or sunflower oil
1 tin creamed sweetcorn
1 cup whole mielies
Sweetcorn Bread – Method
Pack 9-10 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters in the bottom section and get that going.
- In a bowl mix the flour, sugar, salt, baking powder and bicarb together.
- Mix the wet ingredients together in a separate bowl and then pour into the dry ingredients (along with the whole mielies).
- Stir until just combined. Don’t overdo it.
- Grease 2 bread tins with butter (9 x 5-inch tins).
- Put half of the dough in each tin.
- Place the braai grid onto your PotjieKing and place the 1st bread tin in the middle of the braai grid.
- Cover with the KingDome lid. Make sure the vents are closed on the top.
- Close both doors on your PotjieKing.
- Bake for 35 – 50 min.
- Use a metal skewer to poke through the centre of the bread. If it comes out clean then it’s ready.
- Depending on your brand of briquettes you may need to add 5 or so in and allow them to catch alight properly before baking the next loaf.
- Take the loaf off the PotieKing and allow to cool enough to touch before taking it out of the tin.
- Once cool enough to handle, remove the loaf from the tin and allow to cool properly before slicing.
Serve your Sweetcorn Bread with butter and a sprinkle of salt
