Cream Cheese Stuffed Mushroom Burgers with Crispy Bacon Bits
Loved, loved, LOVED these! So quick, so simple it’s silly and so very delish! Lose the bacon for a great vegetarian braai option.
Ingredients:
3 Tbsp butter (melted)
2 tsp crushed garlic
large brown mushrooms
smooth cream cheese
salt
pepper
200 g bacon bits
fresh chives/garlic chives (chopped)
Method
Pack 14 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters in the bottom section and get that going. When the briquettes are ready place your PotjieKing griddle plate on to the PotjieKing to heat up – skottle side up and close both the door on the PotjieKing.
- Melt a little of the butter on the skottle.
- Fry the bacon bits until nice and crispy.
- Remove from the skottle and set aside.
- Melt the rest of the butter and add in the garlic, let that fry for a couple of minutes.
- Using a basting brush cover the mushrooms with the garlic butter.
- Sprinkle a bit of salt inside the mushroom and stuff with cream cheese.
- Place mushrooms onto the braai grid and cover with your PotjieKing dome lid.
- Close both doors on your PotjieKing and the vents on the dome. Cook for 10 – 15 min.
Serve on a bed of lettuce, in a fresh bun, topped with crispy bacon and a sprinkle of fresh chives/garlic chives to garnish.
