Nothing like a hearty bowl of hot soup on a chilly day! As an added bonus it’s healthy too. This recipe makes a great big batch so there will be leftovers ready to freeze for a quick dinner.
Ingredients:
60ml Olive Oil
1 Onion (diced)
2 tsp Garlic (chopped)
2 tbsp Mixed herbs
Salt (to taste)
Pepper (to taste)
4 Knorr Chicken Stock Cubes
1 packet Oxtail soup
1 tin Baked Beans
1 tin Red Kidney Beans
1 tin Onion & Tomato mix
500g lean Mince
1.5kg Vegetables (cut into small cubes)
4 lt hot water
Method
Pack 15 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters into the bottom section and get that going. Once the coals are ready place your no 3 round bottom potjie pot onto the PotjieKing to heat up.
- Brown onion in olive oil until translucent.
- Add your garlic and mince and brown your mince.
- Season with salt and pepper and add mixed spices.
- Add your veggies (preferably cut in small pieces). I used the 1.5kg soup mix from checkers.
- Mix it thoroughly around and allow to cook for approx 20 minutes. Stirring occasionally.
- Dissolve the stock cubes in a cup of hot water.
- Mix the soup powder with 100 ml cold water and then add 3 cups of hot water.
- Add your stock cubes & soup in and then add the rest of the hot water.
- Let the soup cook until veggies are soft and tender.
- Once simmering, I let it go for about 1 ½ hours.
