Creamy Paprika Chicken Orzo
Whip up this one-pot winner this weekend. Quick, easy and comforting. Just what a chilly winter weekend needs!
Ingredients:
800g Chicken Breast (cubed)
1 Tbsp Olive Oil
6 Garlic Cloves
100g Sundried Tomatoes (chopped)
2 tsp Oregano
5 tsp Paprika
1 tsp Onion Powder
500g Orzo
1.5 lt chicken stock
250ml Cream
50g Parmesan
125g Baby Spinach
Salt & Pepper to Taste
Method:
Pack 10 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters in the bottom section and get that going. We used a number 12 Enamel Cast Iron flat-bottomed Potjie Pot.
- Put the oil in the pot and add the cubed chicken breast. Allow to cook through, stirring occasionally.
- Add the garlic and sundried tomato. Cook for a minute until the garlic is fragrant.
- Add in the oregano, paprika, and onion powder and stir.
- Pour in the chicken stock and orzo. Stir often as the orzo can stick to the bottom of the pot.
- Once the orzo is almost cooked (10 minutes or so – test it as you go), pour in the cream, stir in the baby spinach, and add the parmesan. Cook for another minute or two, while stirring.
- Once the orzo is cooked as you like it, dish it up and serve!
