Chicken Tacos
A wonderfully fun and easy family dinner that everyone will love! The perfect combo of crispy taco shells, fresh salad, and juicy chicken.
Ingredients: (makes 12)
800g deboned chicken breast (or thighs)
12 taco shells
1 Tbsp coconut oil (or which ever oil you prefer)
Spice paste:
1 Tbsp olive oil
5 Tbsp lemon juice
1 tsp lemon zest
2 tsp garlic powder
2tsp onion powder
2 tsp oregano
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp pepper
Taco sauce:
1.5 Tbsp olive oil
4 Tbsp tomato paste
1 Tbsp sugar
2 cups chicken stock
Method
- Mix up the spice paste.
- Cut each chicken breast in half so that you have 2 thinner/flatter pieces.
- Cover the chicken with the spice paste and set aside.
- In a separate bowl mix together the taco sauce.
Pack 12 – 13 briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters in the bottom section and get that going. Once the briquettes are going, place a wok or pan onto the PotjieKing and let it heat up for a minute.
- Add the oil into the wok/pan and then place the chicken breast into the pan. Cook well on both sides and remove to a dish when cooked.
- Pour the taco sauce into the pan/wok and stir. While the sauce is simmering, use 2 forks to shred the chicken breast.
- Once the sauce is nice and hot, add the chicken back into the pan/wok and allow to cook for a few more minutes. Remove from the heat.
- Remove the wok/pan, and place the braai grid onto the PotjieKing. Pack the Taco shells onto the braai grid and turn them after 30 seconds or so, depending on how hot your fire is. They heat up pretty quickly, so keep a close eye on them.
Now you are ready to build your tacos! You can add in whatever your tastebuds desire. We layered in the chicken, lettuce, diced tomato and red onion, grated cheese, avo and sour cream. It was DELICIOUS and so much fun. Have some napkins ready as it can get messy in the best of ways!
