
Hammered Beef Fillet with Smoked Mozzarella

Chicken Satay Skewers
Bring a taste of the Orient into your home this weekend with these simple and tasty Satay Skewers! They might become your new favourite dish.
Ingredients
Marinade:
2 tsp crushed garlic
3 Tbsp soy sauce
3 Tbsp honey
1 & 1/2 tsp mild curry powder
500g chicken breast (sliced into strips)
Sauce:
1 tin coconut milk (400ml)
150g crunchy peanut butter
2 Tbsp soy sauce
3 Tbsp honey
juice of 1 lime
Method
- Mix the marinade ingredients together well.
- Place the sliced chicken breast and marinade in an airtight container or ziplock bag.
- Refrigerate overnight. Give it a good shake every now and again.
- Soak wooden skewers in water for at least half an hour before use. This will prevent them from burning as you braai the skewers.
- Slide the chicken strips onto the skewers.
- Prepare the sauce by mixing the listed ingredients in a small pot and simmer until slightly thickened.
Pack 11 or so briquettes onto the coal grid inside your PotjieKing. Put a couple of firelighters into the bottom section and get that going. Once the coals are ready, place your braai grid on the potjieking and braai the skewers, turning occasionally until cooked.
I served this with jasmine rice and ribbons of cucumber and carrot. Drizzle the sauce over the skewers and rice. If you’d like it to look fancy, you can dress it with crushed peanuts and spring onion.
