Perfect Oxtail Potjie Recipe

To get you guys going this weekend here is a delicious perfect Oxtail Potjie recipe. Invite some mates round or snuggle up with the family, either way this is a winner!

Ingredients for your perfect oxtail potjie recipe:
30ml canola oil
30ml butter
1.5kg oxtail pieces
Seasoned flour
1 medium sliced onion
3 cloves of Garlic, sliced
5 large carrots, sliced
1 stick of celery, sliced
12 peeled baby onions
2 sprigs of rosemary
12 baby potatoes
250ml good beef stock
30ml tomato paste
500ml good red wine

Perfect Oxtail Potjie Recipe – Method

Pack one layer of briquettes onto the coal grid inside your PotjieKing™ and place a couple fire lighters in the bottom section and get that going.
Once the briquettes have stopped smoking, place your Potjie pot onto the PotjieKing™ to heat up.

  • Coat the oxtail pieces liberally in seasoned flour.
  • Heat the butter and oil in the potjie.
  • Brown the meat and set aside.
  • Add the prepared onion, garlic, carrot, celery and rosemary and fry until softened.
  • Next add the remaining veggies and heat through.
  • Now add the meat, followed by the hot stock, tomato paste and wine.
  • Cover and simmer gently over moderate heat for 4 hours.
  • Close the doors on your PotjieKing™ once the pot is up to cooking temperature for best fuel efficiency.
  • Add more wine if the liquid evaporates too rapidly.
  • Towards the end if you need to add a briquette or 2 for the home stretch, just slot it in the top door.
  • Season to taste and serve with rice, mash, pap or homemade bread.
